The torta al testo - This sort of unleavened bread, with a round shape made from water and flour, is famous throughout Umbria and is the star of numerous village festivals thanks to its simplicity and versatility. Torta al testo is pure Umbrian street food and you can enjoy it in many different combinations; the filling, in fact, can vary from cured meats to seasonal game - such as wild boar - to cheeses and vegetables: this is why it is suitable for all palates. If you are in a hurry, you can grab it and savor it in the streets of the center, filling your eyes and palate with wonder. The pasticcio di Jacopone - The dish takes its name from Jacopone da Todi, a symbol of the city, and is a gem of the Todi culinary tradition. The appearance is almost unmistakable and appetizing: it is a puff pastry roll filled with pork and veal, vegetables and ricotta. The pie is served in slices, seasoned with tomato sauce, excellent to accompany the pie with a glass of Grechetto wine.
Palomba alla ghiotta (or Todina) - Traditional Todi dish par excellence, a delicacy that speaks a strict Todino dialect, a dish so rooted in the territory that it is the subject of a very popular festival that punctually fills the streets of the Cecanibbi district of Todi. In autumn and winter (October is the ideal month), there is no house or restaurant where the dogfish does not appear. They cook slowly, skewered, gently brushed with oil and rosemary, letting their liquid soul rain into the dripping pan. A success of flavors, with the help of black olives, wine, garlic, sage, lemon and pepper. Some variations are sometimes added, such as capers, juniper berries, ham or anchovies.
