Simple and always unique recipe:
Truffle carbonara
Ingredients for 4 people:
400 g of spaghetti
4 slices of bacon
Pecorino Romano
black pepper
8 fresh egg yolks
160 g of fresh truffle
Fine salt
Extra virgin olive oil
Truffle flakes
Preparation:
Prepare the truffle with oil by grating it finely into a small bowl and covering it with the oil. Then add a pinch of fine salt: this sauce must be stored in the refrigerator in an airtight container (for a maximum of 6 days).
Cut the guanciale into strips, place it on a non-stick pan without adding oil, let it go over low heat, turning it often, until it becomes crispy.
Remove the bacon fat from the pan and set it aside.
Put the water to boil and add salt, throw in the pasta and drain it al dente. The pasta must continue to cook in a large pan together with the guanciale: over a very low heat with a little cooking water. Add a handful of pecorino cheese, the egg yolks and mix well.
Add the previously truffled oil to the pan, mixing gently. Sprinkling of pepper, still with the stove on, continuing to stir and paying attention not to let the sauce dry, adding another drop of cooking water if necessary.
Serve and complete the dish with a few flakes of truffle for decoration
